Nutrition News: Understanding Portion Sizes

One thing that has always confused me and sometimes even misled me about eating healthy is portion sizes.  Sure, I know that fruit and vegetables are good for me but how much is the right amount?  Similarly, I know to choose whole wheat grains like pasta and lean meats, but again, what is the right amount?  Too much of any one type of food, no matter how healthy, is not good.  This is where portion sizes come into play.

Sure you can buy a kitchen scale and weigh all your food, but these days people struggle enough to find the time to prepare healthy meals, let alone weigh their food!  But there is a much easier way to estimate portion sizes without driving yourself crazy and it is in your hand.

Caprese Zoodles

These Caprese Zoodles are the perfect veggie substitution for pasta.  All the deliciousness but with tons more veggies!

Hello!  Happy Wednesday!  For some reason this week I keep thinking it is way later in the week than it actually is.  For example, yesterday I thought it was Thursday!?!  I have had a bad cold this week and haven’t been sleeping great so I’m going to blame it on that!  

I’ve been trying to kick this cold thing in the booty and I’m all about using natural remedies if you can but to be honest, it can be hard to figure out what works and what doesn’t.  For instance, the whole vitamin C thing is apparently not so effective.  But, I have heard that garlic is great for your immune system, so, of course, I don’t need to be asked twice to load up on it.  Honey, aren’t you glad!?

Caprese Zoodles

For Christmas this year I got a spiralizer attachment for my KitchenAid, which is amazing because I don’t really bake and my beautiful bright pink KitchenAid has been sitting on the counter gathering dust.  Well, this spiralizer attachment has changed my life.  Recently, I decided to give it a go and make Caprese Zoodles, which, if you make them my way, have a ton of garlic.

Hello and happy Friday to you!  How was your week?  Mine flew by!  I really have no idea what happened and the next thing I knew it was the weekend.  I took Cooper to a music class this week and it was absolutely adorable.  He started out standing behind me with his hands on my back because he was a bit shy but then he became really interested in the guitar and the shakers and the rattle balls!

I had such a busy week this week.  Each morning I woke up convinced that I must have at least another two hours to sleep only to realize that the baby was crying to get up and that it was actually morning.  I usually can pull myself out of bed as long as there is coffee but yesterday I ran out of milk.  Disaster!  Luckily I met a friend for coffee mid-morning and had one the size of a fairly large bowl of soup (literally).

Friday’s Food & Fitness: Vegetarian Pho

This vegetarian pho recipe is the perfect twist on the classic chicken noodle soup.  It’s good for your soul, can clear up any cold and has a nice spicy kick!

Hello hello and happy Friday to you!  How was your first week of January?  Did you hit it out of the park or are you ready to throw in the towel?  If it’s the latter, don’t yet!!  It’s only week 1!  Jump back on the bandwagon, I promise it will be worth it.

We’ve had some really nice weather all this week.  I’ve taken the little guy out for several walks in the park, a few swims in the pool and we even met the Hubs for lunch one day!  We also started watching Making of a Murderer.  Anyone else watching?  What do you think?  We are on about episode 4 and I’m so torn.  One minute, I think guilty and the next, I think, maybe not….  No spoilers please!  But holy cow, the first episode where he is in jail for 18 years.  Outrageous!
